Anybody having tacos on Tuesday, January 10, 2023?

Not us!

NOLA style crab au gratin with soldiers, roasted and marinated red bell strips and onions, pickled zucchini spears and green beans. I normally can't finish my serving of crab au gratin because it is rather rich, so I decided to serve with the veges. Ate every bit on my plate tonight.

We did!!!
We had been out and about taking care of yet more medical issues for DH and I spied our local Taco Trailer in it's usual spot for the first time in, geez, along time.
So on our way back home we stopped and got some to take home.

We had linner, late lunch/early dinner, Carne Asada street Tacos with Carlos's handmade Salsa and Pico, YUM!!!
 
No tacos, but some nachos, with the last of the chips I had from the guacamole a couple days ago, and some leftover sausage, plus some nam prik pao I just made, since I was down to my last couple tb.
 
I'm on my own tonight. DH took a train to Cornwall. He's spending the night there, at his mum's house with his brother. His brother will drive the two of them to the hospital in Ottawa tomorrow, to visit with their mum.

So, all that to say I only bothered to make a large sandwich. I used up the last of the dark meat from the ginormous roast chicken. I heated it on a frying pan and then had it on whole grain, wheat toast with lettuce and mayo. It was pretty good.
