ok, pulled and foiled at 171, gonna keep it on till 190-195, still looked nice and juicey when i foiled it. my wife picked up a bug slab of salmon while she was out, any suggestions for the wsm or put it on the cedar planks I keep and grill on the straubelstone ? the dogs have been keeping me posted on anyone that gets near the yard today...guess they think theyre guarding their dinner....hope it turns out so its not theirs.
Looks good on the plate. Did you let it rest after taking it off the cooker?
My guess would be that even though you took it to 190 -195, I would say that it probably needed to stay on a little longer.
