Looking for a way to spice up corn muffins one day, I decided to try something different. I used the Jiffy muffin mix mixed as usual and spooned into the muffin pan. I then put a spoon of red jalapeno jelly on top of each one. As it cooked the jelly sort of settled to the bottom and they came out great.

does sound super. i love to play with corn muffins, i add corn, cheese, and sometimes drained chopped green chilies. delicious with chili.
