Curried Pork Medallions

Amount Measure Ingredient -- Preparation Method

1 bag peeled baby carrots (16-oz.)
1 tablespoon olive oil
1 medium Gala or Golden Delicious apple
(unpeeled-cored and cut in 1/2-inch dice)
2 teaspoons curry powder
1 garlic clove -- minced
1 pork tenderloin (about 1 pound) -- cut into 3/4-inch
thick slices
1/2 teaspoon salt
1/4 cup apple cider or apple juice
Place carrots in covered microwavable dish with 1/4 cup water. Cook in microwave oven on High 6 minutes or until carrots are tender.
Meanwhile, in nonstick 12-inch skillet, heat oil over medium-high heat. Add apple, curry powder and cook 1 minute, stirring. Add pork, garlic and salt; cook 6-8 minutes or until pork is still slightly pink in center. Add cider and cooked carrots with any liquid and heat to boiling; cook 1 minute.
Serves 4
Note: A simple skillet dinner ready in less than one-half hour combining tender slices of curry-flavored pork with apple and tossed with baby carrots.
