I made one of our favorite comfort foods tonight--mashed potato soup. I bought a disc of Amish longhorn Colby cheese specifically for this soup. We love how it practically dissolves into the thin potato. The remaining bit of cheese cubes string out when you lift the spoon from the bowl. Tasty and fun!

I also made small salads so it wasn't all carbs and dairy.

Kind of a throw together meal. Had a meeting that was conveniently scheduled during dinner time, so I got home late and we just ate what we could throw together quickly ( and what I trusted her to heat up)

Pea soup ( with fired onions and barley)
Corn on the Cob
Stir fried broccoli ( had to use it up cause it was starting to yellow a bit)

Today was a day for dithering, so I accomplished nothing, including making supper. We ordered Thai food, which was quite good.

Dinner last night was Flank steak, jasmine rice, and caesar salad. Leftovers for lunch.
