EASIEST MOISTEST YELLOW CAKE
Preheat oven to 375 degrees.
Mix 2-1/2 cups All-purpose flour, 1-2/3 c sugar, 1/2 tsp salt, 3-1/2 tsp baking powder in a large mixing bowl.
Add 1-1/4 cup milk, 1 c of vegetable oil, 3 eggs, 1 tsp vanilla to the dry mix.Beat until smooth.Pour into cake pans and bake for about 30 minutes or until done.
I made this cake last night,and it was the best scratch yellow cake recipe i've ever tried so far.I'm so glad i dont have to make the labor intensive yellow cake recipes now that ask for vigorous creaming,beating etc and still come out dry.
I did sift the dry ingredients twice though and brought all the ingredients to room temp first.I baked it in 2, 10 inch round cake pans,and it was done in 25 minutes but it depends on your oven!
