For the past few years, I've just not had the motivation to do much at the holidays. (Too much expectation!!!) One of the things I used to do is make candy. Today, I made a praline recipe from my family's cookbook. My Great-Great Aunt Perry made the very best candy. Here is her praline recipe. The coating is not very chewy, but melts in your mouth beautifully.
Aunt Perry's Pralines
Grease a piece of foil on a cookie sheet with foil.
In a large heavy pot, stir together 1 cup buttermilk, 2 cups of white sugar, and 1 teaspoon baking soda. Place over a low to medium heat and stir constantly until at the soft ball stage. (Today, my thermometer read 239.4 degrees Fahrenheit.)
Quickly stir in 1 teaspoon of real vanilla, 1 tablespoon of real butter, and 2 cups of pecans. Place in patties on the greased aluminum foil and let cool completely. (If the mixture gets too thick to patty up, reheat for a few moments.)
Keep in an air tight container. Not sure how long they last, because they will go fast!
