yup, same for me ( but not with silly overpriced omaha).
ground beef tends to grey from the outside, with pink/red meat still in the center.
what does that mean as far as the grind goes?
i worry not, though, as i go by my nose. it hasn't failed me yet.
beef freshly ground is made into medium rare to medium burgers. beef that's grey'd a bit is crumbled and deeply browned into chili or meat sauce or the ilk.
