Since returning home from holiday in Greece, among loads of tomatoes, I have a lot of chilli plants that have fruited. Next to makingsweet chilli jam, I'd really like to make a rich, sweet but hot sauce that has good keeping qualities.
The chillies I have growing are Bankok, Habernero, and Jalapino. The Bankok variety are very hot. They are small, oval chillies about 2 inches max, and many are either orange or purple. I will be drying a load, but really, I have an awful lot and best get going on them this week before the frosts arrive.
