Recently I was in a "Grilling/BBQ Iron Chef" competition. Secret ingredients, eggs. Everything that was put to heat had to be done outside, over charcoal/lump/wood. Our three man team came up with the theme "Breakfast, Lunch, Dinner". I was in charge of lunch.
Here's my entry...
"Picnic Lunch: Egg, Butter & Old Bay Marinated Soft-Shell Crab Sandwich on Brioche Rolls with a side of Deviled Egg Potato Salad.
Homemade brioche rolls baked on a Weber kettle, slathered with homemade mayonnaise and topped with a soft-shell crab that was marinated in an egg, butter, garlic, shallot and Old Bay emulsion and then grilled. With a side of homemade deviled egg potato salad (also made on the kettle) and a homemade Old Bay aioli dipping sauce...bourbon flip for beverage."
Mayo fixins'
Mayo.
Potato salad fixins'
Eggs abubble.
Bacon going.
Eggs chopped.
Bacon done.
Potatoes going.
Deviled Egg Potato salad ready to be combined.
Combined and ready.
Brioche rolls fixins'
Balled up.
Flattened out for the 3rd rise.
Added some poppy seeds.
...and onto the grill.
Done.
Aioli fixins'
Ready.
Crab fixins'
Butter, garlic, shallot and Old Bay melting together.
Then egg tempered into the hot butter mixture and the crab marinated in it before grilling.
On.
Off.
Drink finxins'
Plated.
Success! We ended up winning but not by much.
