This is one of our families favorite cakes! My son even wants it for his birthday present. Some people make it with crushed pineapple instead of fruit cocktail, but I haven't tried that yet.
FRUIT COCKTAIL CAKE
MIX TOGETHER
2 CUPS SUGAR
2 CUPS FLOUR
2 TEASPOONS SODA
2 EGGS
2 (15.25) OUNCE CANS FRUIT COCKTAIL
POUR INTO A 9X13 PAN
BAKE AT 350 FOR ABOUT 30-40 MINUTES, OR UNTIL IT IS SPRINGY TO THE TOUCH
FROSTING
PUT IN A LARGE MICROWAVE BOWL (MORE THAN 2 QUARTS) (OR IN A SAUCEPAN)
1 1/3 CUPS SUGAR
1 STICK BUTTER
1 SMALL CAN EVAPORATED MILK
1/2 CUP COCONUT (OPTIONAL)
COOK UNTIL THICKENED
POUR OVER HOT CAKE
