Kahlua Chocolate Cake

3 Eggs -- separated
3/4 Cup Granulated Sugar
1/2 Cup Butter
1 Cup Light Brown Sugar -- packed
2 1/4 Cups All-purpose Flour
1/2 Cup Unsweetened Cocoa Powder
1 1/2 Teaspoons Baking Soda
3/4 Cup Coffee -- strong & cold
3/4 Cup Kahlua

Kahlua Frosting
6 Tablespoons Butter
1 Pound Powdered Sugar -- sifted
3 Tablespoons Unsweetened Cocoa Powder
3 Tablespoons Kahlua
2 Tablespoons Hot Coffee -- 2 to 3

Cake Batter:

Grease and flour two 9 in. cake pans. reheat oven to 350°.
Beat egg whites until frothy; then beat in sugar until stiff peaks form.
Set aside.

Cream butter and brown sugar until fluffy. Beat in egg yolks one at a time.

Sift flour, coca, and baking soda together. Add to creamed mixture alternately with coffee and Kahlua; blend well.

Fold egg whites into batter.

Pour into prepared pans. Bake for 30 to 35 minutes, invert on wire rack; remove pans. Cool before frosting.

Kahlua Frosting:

In a large bowl, cream 6 Tbsp. of butter and 1 lb. of sifted powdered sugar together.

Add 3 Tbsp. of unsweetened coca powder, 3 Tbsp. Kahlua and 2 - 3 Tbsp. of hot coffee; beat until smooth.
 
Kahlua is a Mexican coffee liqueur with herbs and vanilla... I found this from Google... Is that correct? Raine!..
 
That's correct.

White russians are made with kahlua.

This is another take on Kahlua Chocolate cake. My sister made this a few years back at Christmas and everyone loved it. It is a very moist cake.


Chocolate Kahlua Cake



1 box Yellow Cake Mix
1 box Instant Chocolate Pudding Mix
1 cup Vegetable Oil
3/4 C Water
1/4 C Kahlua (or other coffee flavored liqueur)
1/4 C Vodka
3 Eggs

Preheat oven to 350 degrees. Grease and flour a bundt pan.

In a large bowl, combine all ingredients and mix well. Pour into bundt pan.
Bake for 50-60 minutes. Test for doneness with toothpick. Remove cake from oven, and immediately pour glaze evenly over cake while still in pan. Let cake rest for 30 minutes before removing from pan.


Glaze


1 C Sugar
1/2 C Butter (not margarine)
1/4 C Hot water
2 Tbsp. (Kahlua) Coffee Liqueur
2 Tbsp. Vodka

Mix first three ingredients in saucepan. Bring to a boil and cook for 1 minute. Remove from heat. Stir in Vodka and Kahlua. Pour over cake.
