In a large skilltet cooked up about 3/4lb pork chorizo and a small chopped onion.

In a smaller skillet I added a layer of the cooked chorizo, shredded Oaxaca cheese, another layer of chorizo, Oaxaca cheese, and some chopped and cleaned Hatch chiles I had in the freezer

Cooked indirect for 30 minutes

Spooned some of the mixture on some small tortillas that were warmed on the grill
