This weekend I have the same amount of time 5 hours. At least this time I know just to foil a bit longer and do them a bit higher temp.

Well the first problem I had was that 99% of the time I use sides (trimmed St. Louis) not backs. We were given backs to cook. Additionally these were some of the thickest backs I had ever seen. I foiled for less than 2 hours. I should have foiled these for 2 hours though. I know better for today.
