Some of our friends have started an annual wing/rib cook-off. Nothing too serious...mostly just another excuse to get together with great friends, let the kids go crazy and cook some good eats. There were 7 "cooks"...I didn't win anything but had an absolute blast!
Here's our "kitchens" (3 of the 7 cooks).
Started off with some breakfast. A fatty (forgot to take a pic), kettle baked biscuits and American cheese.
3 racks of baby backs salted and then rubbed with this.
On for 3.5 hours at 250*.
Decided to do Cornell wings. Out of the brine and rubbed.
On 45 minutes indirect and then direct to crisp the skin.
Ribs off.
Ribs "turn in box" (like I said, nothing fancy here)
Wings.
Even though I didn't win jack I was really happy with everything.
