Soy Sauce -- homemade

I need to make a soy sauce substitute without salt or an extremly small amount due to my restricted sodium diet. Reduced-sodium or light sodium commercial products contain much more sodium than my diet allows.:ermm: My intake is about 500-700 mg sodium per day.

I have two recipes for a substitute ... one kind of; sort of takes like it but not much:glare: and the other one would be more suitable as a sub for Teriyaki sauce as it's sweet.:huh:

Any help would be greatly appreciated.:)

Gosh you have presented an interesting challange.

Would probably go with ginger, mirin, maybe a touch of vinegar, and let it steep in a bit of sliced garlic.

Could add citrus juice amd cilantro. And some chilis.

There are a number of Asian sauces one could add but most I expect contain salt.

You might want to investigate that.

that is all I can offer.
 
I have actually just mixed some soy sauce with some water to tone it down.

Weaver, for mcnerd's you may be able to cut down even more on the beef bouillon.
