1 red chilli
3 tbs extra virgin olive oil
2 tbs soy sauce
1 tbs pure maple syrup
30 fresh scallops with roe
6 spring onions
3 limes
1 Chop the chilli finely and place in a bowl with the olive oil, soy sauce and maple syrup. Place the scallops in the mixture and marinade for 1 hour.
2 Wash and dry the spring onions and chop in 5-6cm lengths. Cut the lime into thin wedges.
3 Take 10-12 skewers and thread 2 or 3 scallops on to each skewer, placing a piece of spring onion and a wedge of lime between each scallop.
4 Heat a barbeque grill and when hot place the skewers over the heat. Grill for about 2 minutes each side or until scallops are just cooked through. Serve at once.
Yield: makes 10-12 skewers
