I went into the stand up freezer yesterday and found this Meatless Lasagna that I put together back in September.
Thought it would be tasty for Monday (needs 24 hours to defrost in the `fridge).
Little did I know that I would spend all day today decorating out front of our house and really didn't feel like doing another meal prep.
(already did breakfast and lunch, kinda pooped)
That worked out perfectly.
I threw some bread into the hot box for that last 5 minutes of the bake
and Bob's your uncle!
Nice enough day to give the sun room its last good clean of the year, so supper was another quick and easy. We had small salads, split a can of Progresso Italian Wedding soup, and had toasted ham and cheese sandwiches on small sub buns.
Tonight, I baked a store bought, beef tourtière and made some gravy. I served it with a salad and the last of the rice pilaf. Stirling also had some potatoes. We must have liked it. We both had seconds.
