It's not just April Fool, It's a Virtual Celebration!

We are not having just any old leftovers. We are having taco stuffed baked potatoes and marinated corn and black bean salad. Banana bread for dessert later.

So here it is! It was given 2 thumbs up. Chicken fried steak, mashed potatoes, and buttered corn.

Sorta-Kinda a Spanish Rice Dish -
Burger, Bell Pepper, Onion, Rice, Seasonings, and topped with a Mexican 3-Cheese

DH made burgers from some ground Angus beef. That beef is really tasty. We had them on some sesame kaiser buns from a local bakery that I get with my basket order. Put all the fixings on the table and we each assembled our burgers as desired. I sliced the onion, because cutting onions doesn't bother me. I really enjoyed that meal, but I ate a bit too much.

I'm going to make grilled Teriyaki B/S Chicken Thighs
My Quick Cucumber Kim Chee (kimchi, how ever)
and the ever present steamed White Rice
(which I'm starting run low on-we may need to go foraging again)

and for dessert, we'll finish off what I'm calling
Apple Pie with a scoop of Vanilla Ice Cream :yum:
 
K-Girl at first I thought you had apple pie with mashed potatoes. :wacko:

Dave, two thumbs up is always a good thing.

Today was a two pot of soup day - one for today, one for tomorrow. Today we had cheesy cream of broccoli soup with the last of the French bread rolls.

Younger DD grilled skirt steak and steamed corn off the cob. I took a bite of each.

I'm not really interested in cooking or eating.
