I'm planning a Mother's Day brunch for my mom, sister and some of mom's friends. Main course will be a Caramel Baked French Toast with Canadian bacon (on the side). I'm also preparing a simple fruit salad. Is this enough? Can anyone think of something else to go with this? Since the french toast is already a sweet, muffins seem like overkill. There will be 5 (possibly 6) people. Thanks!!
 
It sounds like you have it well-planned!! There is sweet/salty/fruit. I agree that muffins may be overkill. The only thing that comes to mind is something like hash browns/home fries.
 
As much as I love breakfast potatoes, I don't think I would serve any with French Toast.

Your menu sounds complete to me. The complexity is coming from the "Caramel Baked." Personally, I would start with a citrus fruit cup, to bring some acidity to the meal. Fruit is perfect as an accompaniment to the rich main dish, imho.
