This is a recipe that my MIL makes. It's very tasty.

Copper Chicken



½ tsp. salt

½ - 1 tsp freshly ground black pepper

1 T plus ½ tsp paprika

1 5 to 6 lb. Roasting chicken

2 T melted butter or vegetable oil

2 heads garlic (about 24 cloves), peeled

Grated peel (no white attached) of 1 orange

2 bay leaves

2 sprigs fresh rosemary

3 to 4 c. fresh or canned chicken stock or broth

1 T chopped fresh rosemary

Freshly ground black pepper



Preheat oven to 400oF.



Combine the salt, pepper & 1 T paprika. Rub chicken with butter or oil, then spice mixture. Stuff the cavity with the garlic cloves, half the orange peel, bay leaves and rosemary sprigs. Truss the legs and put the chicken in a large baking dish.



Add enough stock to come 1 inch up the side of the chicken. Place in the oven & bake about 1 to 1½ hours. Place the chicken on a cutting board & let sit 10 minutes before carving.

PS. Just realized that this isn't her own recipe! It comes from a Natalie Dupree Cookbook called Great Meals for Busy Days. That probably means I wasn't supposed to post it. Should I delete it? Dont want to get in trouble...
