These are SO GOOD!

Gingerbread Pancakes
3 Eggs
1/4 c Brown sugar
1/2 c Buttermilk
1/2 c Milk
1/4 c Coffee, brewed
2 1/2 c Flour
1/2 ts Salt
1 ts Baking powder
1 1/2 ts Baking soda
1 ts Cloves, ground
1 tb Cinnamon
1 tb Ginger
1 tb Nutmeg
4 tb Butter, melted

1.Cream together the eggs and the brown sugar, then add the buttermilk, milk and coffee.
2.In a separate bowl, sift together the flour, salt, baking powder, baking soda, cloves, cinnamon, ginger, and nutmeg.
3.Combine the egg/milk mixture and dry ingredients. Stir in the melted butter. Do not overmix!
4.Cook on a griddle as you would any other pancake. It is fun to dribble the batter into holiday shapes for the kids. Serve with lots of fresh whipped cream, molasses, and maple syrup!

How do you think these would be if I substituted the coffee with milk? My husband abhors anything coffee! (I married him anyway! )

Oh I think it would be just fine - there is not that much coffee anyways.
