Brown Cabbage?

We just recently had a fund raising event and made Halushki (cabbage & noodles) to sell. One girl cooked the cabbage in a crock pot and the cabbage turned a brownish color as opposed to steaming it on the stove. Any reason why it turned brown?

Two reasons I can immediately think of are oxidization and dry heat burn.

I do cabbage in the crockpot on a regular basis. Kind of hard to get dry heat burn in such a moist environment, unless she left the lid off. I would be interested in what ingredients she might have added to the cabbage.
