Chicken in crockpot ideas

ok it's 11am and I don't have too many good crock pot recipes. I got some boneless chicken I need to use up. I also got some red potatoes and unfortunately ONLY frozen veggies I think. I have to check. I might have a little fresh brocolli left over. Anybody come across any good crock pot chicken recipes lately? I would like to have dinner ready no later than 6pm tonight and it's already 11am.
 
How about a chicken stew. Here is how I would make it with what you have on hand.

Cut chicken into cubes
Cut an onion into cubes
Cut some tomatoes (2-3 or small canned tomato is fine) into cubes
Some finely minced garlic (several cloves)
assorted veggies (throw in some of your frozen veggies - about a cup)
Dry spices (whatever you have on hand - 1/2 tsp) - Cumin, Corrainder, Cayanne, Cinnamon, black pepper is what I would recommend)
salt about a tsp
1 tbsp of oil
juice of 1/2 a lime (to perk the flavors up)
1/4 cup of water or coconut milk or plain yogurt (either one of them will work) if you have some (not more than that because chicken will give away a lot of water as it cooks)
Fresh cilantro for garnish or any other fresh herb you have

Mix all this into a crockpot. Let it cook for several hours on low.

Cook some rice and serve the chicken with it.
 
Should I wait to put the frozen veggies in? I think I remember putting frozen veggies in a recipe before for the crock pot and they overcooked from cooking for so long.
