Pork Ribs With a Soy, Chili, Rum Sauce

4 pounds pork spareribs
1 cup brown sugar
1/4 cup ketchup
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup rum
1/2 cup chile sauce
2 cloves garlic, crushed
1 teaspoon dry mustard
1 dash ground black pepper



1 Preheat oven to 350 degrees

2 Cut spareribs into serving size. Wrap ribs in double thickness of foil and bake for 1 1/2 hours. Unwrap and drain drippings.

3 Combine in a bowl: brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard and pepper. Pour over ribs. Marinate at room temperature for 1 hour or refrigerate overnight.

4 Bake for 30 minutes, basting with sauce or grill for 30 minutes, 4 inches above coals turning and basting.

Kitchenelf, I've a similar recipe where the soy sauce is replaced by hoisin sauce and rum by sake. I also add a little grated ginger. It's really very good.
 
YUM!!!! Will make note on my saved recipe! By the way - your signature line says "Food lovers of the world unit" - may I suggest we unite in either St. Marteen or Tuscany? Just thought I'd get my vote in early :LOL:
 
Both places have my vote, with a tiny preference for Tuscany because of the food and the wine. And the herbs. And the architecture. And the history. And Italian. And Italian belli ragazzi.
