What's for Wednesday's Dinner - 3/4

This evening's Grilled Ham Steak, Skillet Babbage w/ Bacon, Mashed Sweet Potato and Peas & Pearls.....

I have a pot on the stove now that is poaching
some b/s Chicken thighs that will serve two-fold:
Chicken Broth for later
and
Shredded Chicken for tonight's supper,
Green Chile Chicken Enchiladas.
I'll be taking K-L's suggestion and fire-toasting
the Flour Tortillas prior to stuffing, drowning
them in Green Chile Enchilada Sauce, topping that
with Cheese and then under the broiler before serving

Did ya hear my stomach growl real big there :LOL:
 
We ordered pizza from the local joint down the street along with chef salads. I've been fighting a cold for several days and really didn't feel like cooking.
 
Tonight's dinner was a recipe posted by Kayelle, Greek Thighs. This is a very tasty dish. SO and I both liked it.
 
Stirling's tummy is feeling delicate, so we were going to have fettuccine Alfredo, but we don't have any fettuccine, so it was spaghetti Alfredo. The sauce doesn't stick to spaghetti as well as it does to fettuccine. It still tasted good.
 
Iceberg wedge salad with blue cheese dressing. NEW red potatoes with butter and chives. Stone crab claws with mustard sauce.

Loved those little charred bits on the ends there :yum:
I used Tillamook White Sharp Cheddar Cheese
which I thought DH did not like :ohmy:
He does! :huh:
That's my favorite cheese in the world!

We went to the Tillamook factory tour,
WAY long time ago, 2001/2002 I think ???
Anyways, they now have a new place that
I would very much like to visit !!!
 
I put the rest of the leftovers on the back burner, so to speak, to save them for tomorrow - my grocery shopping day. Tonight we had breakfast - shallot and mushroom omelet with mozzarella cheese, sausage links, and smash browns. I didn't have shredded hash browns in the freezer, but I did have tater tots. A little defrosting, a little smashing...voila, smash browns!

Sausage links, roasted potatoes & onions, scrambled eggs & cheese, sliced cucumbers and tomatoes for lunch. Grilled cheese sandwiches and tomato soup for supper.
