I'm making classic Vietnamese Bahn Mi sandwiches with the leftover pork loin roast from a couple of nights ago. I especially like the addition of a generous pile of the fresh slivered veggies (daikon radish, carrot, red onion, jalapeno) marinated in rice wine vinegar, salt, sugar and fish sauce. Nice big toasted Bolillo rolls work well. They should be tasty on this hot evening.
 
Been a bit of a busy day that has been messed up with an attack of "Arthur," along with shin splints. Crap! Gettin' old ain't for sissies.


So.............


I fired up the smaller crock-pot, put in a nice meaty piece of beef, along with a good quantity of coarsely chopped onions, baby carrots, tiny red potatoes, chopped canned mushrooms, a can of cream of mushroom soup, a couple of tablespoons of dry onion soup mix, some red wine...and we were off.


After 8 hours we feasted. Plus, there is still enough left to have another meal for tomorrow. Imagine that?!
 
I had my 14 yr. old granddaughter Samantha and 9 yr. old grandson Tyler for the afternoon. :heart: I knew it would be busy here, so an hour before they got here I called in an order for Chinese and went to pick it up. :) I prepped a fresh fruit salad and cheese and crackers tray for their after school snacks and nibbled a bit with them. Enjoyed the Chinese dinner after they got picked up late afternoon.

We all enjoyed our afternoon, especially the rain. Went outside and let the rain fall on us. :)

Chocolate cupcakes. Trying to get Magnolia style down pat. Have the buttercream frosting down but the cake part still not there yet. Oh well guess I’m going to have to make another batch soon... :)

It was a dank and dark day, chilly, so I made chili, cornbread muffins, a salad with avocados and vanilla pudding with rhubarb conserve and whipped cream for the Elders. I ate popcorn and watched a movie.
