Well after we went to Mexico a few years back I have had a Love for authentic fish tacos. So tonight I made some Achiote Fish Taco’s. They were topped with salsa, fresh cilantro, Mexican blend cheese, fresh squeezed lime, red onion and cabbage for a little crunch. The sides were some stuffed Japs, homemade guacamole, blue corn chips and some refried beans. Washed it all down with a cold Dos Equis.
