I'm a nut! I love the flavor of coconut, but have never liked the texture!
So this is my favorite coconut cream pie recipe!
EASY COCONUT CREAM PIE
Graham cracker crust
1 pkg. instant coconut cream pudding
1 1/2 c. milk
1 1/2 c. vanilla ice cream
Cool Whip
Freeze graham cracker crust for 15 minutes.
Mix together pudding, milk and ice cream; beat well.
Pour in frozen pie shell.
Refrigerate.
Top with whipped cream (or Cool Whip).

The recipe I've always used is in the Better Homes and Gardens cookbook. My book is old, but I assume the recipe is still the same. It always turns out delicious. It's a "from scratch" recipe, but it isn't hard to do. Wish I had some right now! Good luck!
