Made this yesterday - first time I tried it - liked it.
Mixed cooked hulled Barley and cooked brown Lentils (these were cooked
separately in broth with bay leaves).
Added diced red onion (soaked in water and drained), sauteed mushrooms,
minced celery, diced cooked carrots, diced raw zucchini.
Dressed in red wine vinegar and a bit of oil - salt, pepper -
I added hard boiled egg.
I really liked it - of course you can add whatever vegetables you like.
I will be making this again for sure.
