Executive Chef
This is a really easy little sauce, and great to have in your file for quick and easy sauces!
BASIL CREAM
makes about 1 ½ cups
20 basil leaves
½ cup dry white wine
2 cloves garlic
1 cup heavy cream
1T lemon juice
2T butter
salt/pepper
Combine basil, wine, and garlic in blender and process to a smooth puree. Transfer puree to saucepan and stir in cream; bring to simmer and cook til reduced by half, stirring frequently. Whisk inlemon juice and butter. Remove from heat and add salt/pepper. Serve with grilled fish or chicken.
