Yes you can use clarified butter for your cookies, however you must remember that it will weigh less than whole butter, so you must compensate for that...

My tip of the day ......
If you like polenta....put the polenta into cold milk or water...I like milk and a bit of cream....add salt and pepper to taste... let it sit for a half hour and then bring it to a low boil and reduce the heat till thick.....no lumps or mess pouring into boiling water etc.....e
