Thanks for everybody's thoughts. It allowed me to use some of the ideas here but also find a recipe online that incorporated those ideas. I mostly used the recipe at this link.

I just put it in a roasting pan with no rack, put in paprika instead of the anchovies and threw in the vegetables with 90 minutes to go with 2 cups of apple juice. Turned out unbelievably delicious. It took 7 hours or so.
