Carrot Ice Cream Pie

I had a recipe years ago for a Carrot Ice Cream Pie. It is long gone. I remember that it called for a can of cooked Carrots, Grated Orange Peel, Pie Crust and a Pint of Vanilla Ice Cream. It also had sugar that was pureed with the carrots. I just don't remember how much. Has any one seen such a recipe?

Thank you for looking for me. I have googled it, but that is not the recipe I used. It was as stated with ??? amount of sugar pureed with the carrots. The one I used also had Orange zest, so hence, orange color, orange taste. I guess I will just have to wing it when I make it again.

Now that sounds like an interesting recipe. I'd love to try it on my family but I would haave to tell them it's oranage pie or they would never eat it!

Carrot Ice Cream, who would have thunk it..lol! I suppose if Avocado pie can taste nice this could be too. Maybe I should make it beetroot and carrot, my kids love pink food
