1 egg white
4 tbsp caster sugar
1 1/2 cocoa powder
140g plain chocolate, cut into pieces
Preheat oven to 120C
Line a baking tray with baking paper
Whisk the egg white until firm
Add half the sugar and whisk until stiff
Fold in the rest of the sugar and the cocoa powder
Put the mixture into a piping bag, and make fingers, about 7cm long
Put them on the tray, well spaced apart
Bake for one hour
Cool on a wire rack
Melt the chocolate in a double boiler
Cool slightly, then dip the meringue into the chocolate, one at a time , to half -coat them
