I was so inspired by the "Dinner party at Griffs" that I wanted to do the same for Christmas Eve. Did a smaller practice run today for dinner. Rib roast, roasted veggie risotto and salad. The WSM held pretty solid around 340 and I pulled the roast at 120. I think on the 24th, Ill prob pull it at 110. All and all it was a good time. My brother joined us and brought all the fixens for martinis ! Life is good.
