It was pretty good, got the idea from Chili's baked potato soup. Boiled up 8 medium sized potatoes, kept the water. Added a tbsp beef stock, 2 cups cream, 1/2lb smoked bacon cut up, 2 cups shredded monteray jack/chedder cheese, one large onion cut up, 1 can kernel corn. Salt and pepper to taste, I also added a tsp of hickory liquid smoke flavor and a tsp pickapepper sauce to kick it up a bit. Thickened with corn starch cause I like it nice and thick.
Not bad for a first try!
