This is a favorite around here. We not only use it over veggies, but it is good over chops and steaks .
Saute 1/2 lb. of quartered fresh muchrooms in 2 tab. butter and 1/2 c. shallots of onions, just til tender. Stir in 1 tab. flour. Add salt, pepper and 1 c. light cream. Remove from heat and add 1/2 c. sour cream. We sometimes tripple this and add over tiny pasta, like some orzo.
