Ingredients;
1 whole roasting chicken
1 onion cut into slivers
3 cloves garlic, finely minced
1 lb. bacon slices.
salt
pepper
Preheat oven to 375'F. Clean and dry the chicken, inside and out. Makee small incisions into the chicckn breasts, all over. Sfut the incissions with the onion slivers, and a piece of the raw bacon. rub the garlic all over the chicken. Cover tje chicken with the strips of bacon, top, bottom, and sides. Place on rack, in roasting pan and place into the oven. Use a meat thermometer that can stay in the bird while it's roasting. Remove the chicken from the oven when the internal temp reaches 145. Remove the bqacon and set aside. Season the chicken with salt and pepper and put back into the oven. Increase the temperature to 425; F. Roast to and internal temperature of 360' F. Remove and let rest for ten minutes befor carving.
Use the roasting pan drippings, and the bacon to create a rich gravy.
