This is a recipe for lemon bars, no refined sugar, no oil, no salt. I wanted something sweet.
The yellow of the filling for lemon comes from white sweet potatoes, which I have on order and expect them in a week or so.
I used regular sweet potatoes instead for the filling (so it is orange) and some orange juice concentrate for part of the lemon juice.
I used lemon and lime rind instead of orange rind.
I tasted the filling before I put it in the freezer, it is fantastic.
Lemon Filling Ingredients:
3 cups of cooked Japanese sweet potatoes without the skins
1/2 cup lemon juice
1/2 cup non dairy milk (unflavored & unsweetened)
1/2 cup date paste
Zest of one lemon

Crust Ingredients:
1 1/2 cup rolled oats
6-8 dates pitted
1 tbsp lemon juice
1 tbsp non dairy milk (unflavored & unsweetened)
1 tsp vanilla extract (optional)
Zest of one lemon (optional)

I used the food processor to make the crust, pressed it into an 8 inch square pan (parchment lined). Then used the food processor to make the filling, spread that on top. Put it in the freezer, serve it in squares ice cold. Perfect for a hot day!

I'll be having some before I go to sleep tonight.
 
OMGOODNESS, we loved it as Orange Bars! We both had them last night and they were reminiscent of a dreamsicle.

For the measurements on the Orange bars I used:
Lemon Orange Filling Ingredients:
3 cups of cooked regular orange sweet potatoes without the skins
1/4 cup lemon juice+3 T orange juice concentrate
1/2 cup non dairy milk (unflavored & unsweetened)
1/2 cup date paste
Zest of one lemon/lime/orange

Crust Ingredients:
1 1/2 cup rolled oats
6-8 dates pitted
1 tbsp orange juice concentrate
1 tbsp non dairy milk (unflavored & unsweetened)
1 tsp vanilla extract (optional)
Zest of one lemon/lime/orange

We're going to want these in both the lemon and the orange flavored bars. Perfect for summer.
 
Peach Bars
(yes I made them tonight, the filling is delicious)
Peach Bars

Peach Filling Ingredients:

2 cups of cooked regular orange sweet potatoes without the skins

2 cups diced peaches

1/2 cup non dairy milk (unflavored & unsweetened)

1/2 cup date paste

Zest of one lemon/lime/orange


Crust Ingredients:

1 1/2 cup rolled oats

6-8 dates pitted

1 tbsp lemon juice concentrate

1 tbsp non dairy milk (unflavored & unsweetened)

1 tsp vanilla extract (optional)

Zest of one lemon/lime/orange

Food processor, crust, press into an 8x8 pan (lined in parchment).
Food processor, filling until smooth, spread over the crust, and freeze at least 2 hours. Serve frozen.

On these hot days I am craving something mostly healthy, cold and refreshing.

This afternoon I made frozen pineapple bars.
Pineapple Bars

Pineapple Filling Ingredients:

2 cups of cooked regular orange sweet potatoes without the skins (the white sweet potatoes would probably be better with the pineapple, color wise)

1 and 1/2 cups chunks of pineapple, drained

2 T lemon juice

1/2 cup date paste

Zest of one lemon/lime/orange


Crust Ingredients:

1 1/2 cup rolled oats

6-8 dates pitted

1 tbsp lemon juice concentrate

1 tbsp non dairy milk (unflavored & unsweetened)

1 tsp vanilla extract (optional)

Zest of one lemon/lime/orange

Food processor, crust, press into an 8x8 pan (lined in parchment).

I tasted the filling, it was delicious.
 
Back to the original recipe. I got 2 kinds of japanese sweet potatoes.

The first recipe is the original using the white interior sweet potatoes. I really like them with 1 teaspoon of lemon and lime rind. And for the 6-8 dates in the crust I used 1/4th cup date paste.

Frozen Blackberry Bars

Ingredients
Blackberry Filling Ingredients:
3 cups of cooked Japanese sweet potatoes (the red purple ones with the purple insides) without the skins
1/4 cup lemon juice
1/4 cup non dairy milk (unflavored & unsweetened)
1 cup of seedless blackberry puree or jam
1/2 cup date paste
Zest of one lemon

Crust Ingredients:
1 1/2 cup rolled oats
1/4 cup date paste
1 tbsp lemon juice
1 tbsp non dairy milk (unflavored & unsweetened)
1 tsp vanilla extract (optional)
Zest of one lemon (optional)

Food processor crust, press into 8x8 inch pan with parchment.
Food processor filling, spread over crust, freeze and cut. Enjoy.

Ingredients
Spice Pear Filling Ingredients:
2 cups of cooked sweet potatoes without the skins
2 cups of diced cooked pears
1/2 cup date paste
Zest of one lemon
1 t cinnamon
1/4 t ginger
1/4 t nutmeg
1/4 t cardamom

Crust Ingredients:
1 1/2 cup rolled oats
1/4 cup date paste
1 tbsp lemon juice
1 tbsp non dairy milk (unflavored & unsweetened)
1 tsp vanilla extract (optional)

I have 21 ounce cans of guava paste. It is made with sugar. I put the numbers for sugar for it, into cronometer, and it comes out as about the same amount of carb/sweets as 2 recipes of date paste and fruit filling. So I made Frozen Guava dessert bars last night.

Your lemon filling sounds awesome! I love how you're experimenting with Japanese sweet potatoes. Even though you didn't have the white ones, using regular sweet potatoes and adding orange juice concentrate must still give it a great flavor. And swapping out orange rind for lemon and lime rind? Genius! It's like a citrus explosion!

The crust sounds delicious too, with rolled oats and dates. I bet it adds a nice texture to the squares. And serving them ice-cold from the freezer? That sounds perfect for a hot day!
