A friend of mine raises Berkshire Pork..they aren't crazy about certain cuts so they dropped off a big bag of sliced hocks. Here are a few...they are going into the brine today and I will smoke them early next week..good for soups, stews, other slow cooked dishes...wish me luck..

You are very fortunate to have such a friend, I see baked beans, lentils, split green, or yellow pea soup, , French Canadian pea soup, and ham hocks and cabbage in you future., maybe even a modified Cassoulet.:yum:

Yes..handy guy to have around. He is also a guitar player in the band I am in..I tried to get some other cuts this time but everything was spoken for before the pig was processed..they felt sorry for me and dropped off about 25 packs of hocks. Now I have too many as I don't normally use them often..:LOL:
 
Craig would love to have some of those to make Schweinshaxe. He had that dish at a German restaurant prior to COVID and loved it.
 
Ham and bean (navy, great northern) soup
Really good simmered with Lima (butter) beans, served up with mashed potatoes (for those days you want extra carbs)
Simmered in sauerkraut
 
Last year or so I discovered a local meat market smokes meats, and does a very good flavorful job too. It's close by, but we seldom shop there because everything is so much more $$ than grocery store. Their ham hocks and ham shanks are so good and worth the expense when used in pea soup. So much for making a cheap peasant style dinner, ha.

Yeah..right place at the right time..I love to get my hands on the unpopular bits and turn them into something good...
 
Three days in brine and 12 hours in the refridgerator uncovered...not so appetizing looking at this point..in the smoker they go for a few hours..

All done after about 4 hours in the smoker..now to let cool, freeze and plan how to use them..thanks for following!

They turned out nice..now, to use them up..what is your favorite way?

I use them for white beans often. Adding the meat back into the pot makes the beans especially delicious.

Haven't made potato soup in a while but, they added great flavor, when I used them. I have to do that again.
