I tried making candy canes. I didn't have corn syrup I used cream of tartar to invert table sugar. I used 4 cups sugar 1/2 cup water 1/2 tsp C.T.1/2 tsp mint 285*f soft crack. When it cooled it would crack but when sucked on it would soften up and wouldn't crunch. I even took it to 305 hard crack. It made it super brittle, but again when sucked on it was a filling puller and wouldnt crack. Any suggesions?
