I wanted to share what we did once.. yummy recipe. My husband likes sauteed greens (escarole, spinach, broccoli rabe, kale.. all of them.) So.. I blanched some broccoli rabe for 2 minutes, heated some EVOO, garlic, put in the broccoli rabe, ended with some cut up roasted peppers and toasted pine nuts. (season with s&p too) I admit, even I liked it!! (I usually turn my nose up to the greens, but if they're done right... like by ME and not my MIL... I like them!) HA!
I have also made sandwich melts.. found the recipe in one of my South Beach Diet cookbooks....sauteed chicken breast, put it on a piece of toasted whole wheat bread, cover with one large roasted pepper and one slice of provolone, under the broiler for a bit.. .voila. it was tasty!
