Try this one from a NZ cake site:
versatile butter cake
125grams of softened butter
2/3 cup of caster sugar
2 eggs (lightly beaten)
1 tsp Vanilla Essence
2 cups Self Raising Flour
2/3 cup milk
Line and grease a deep 8" round cake tin [20-22cm size]
Beat butter and sugar until light and fluffy
Add eggs and Vanilla Essence (Beat until well mixed)
Add small amounts of flour and milk until well mixed in together. [do this by hand so you won't over mix]
Place into tin and bake 175oC 40 - 50 mins.
Test with a skewer to ensure that it is cooked. but don't over bake ..
