I ran out of time!

I'm brand new to canning. I ran out of time and took the regulator off to release the pressure.
My jars are fine but is my chicken ok? There was a lot of broth in the canning water. I didn't know removing the regulator was a no no.

When you say you ran out of time, do you mean that the pressure time was correct but you took off the regulator too early?
or do you mean the pressure time was cut short.
