I agree with Aunt Bea. I find that Chef John's recipes work fine as written. I have used a number of his recipes and have learned to just make them as written or with modifications that he has suggested.

But that is his recipe and how he cooks the potatoes. The video was very detailed and his explanation and demonstration were very clear.
