Left over recipes

Does anyone have any good recipe's for the veggies, cheeses and cold meats left over from the huge holiday feasting.
I found a great website devoted to leftover recipe's and got quite excited, so I'm keen to learn anyone else's delicious left-over recipe's.

Omelets, sandwiches. Veggies from the veggie tray could go in soup.

Soup's and stews are a great idea.
I like mashing up left over veg with potato, molding and frying in butter - bubble and squeak.
Sometimes I stuff the veg cakes with cheese and roast them. Yum!

Good point. Since I live alone, I usually take half of any cold cuts and freeze them so they don't go bad before I can finish the package. It works just fine.

Soups are real good. We use the ham bone to make white bean and ham soup.
