Lemon Jello Cake

Lemon Jello Cake:

1 yellow cake mix
1 3-oz. package lemon jello (other citrus flavors work well too)
3/4 cup water
4 eggs
3/4 cup oil

Add jello, water and 1 egg to cake mix. Beat well. Add 3 more eggs. Beat thoroughly. Add oil and beat well again. Pour into greased and floured 9" x 13" pan.

Bake at 350 degrees for 35 minutes, or until a toothpick inserted in the middle comes out clean. Remove from oven and prick the top of the cake all over. (I have used dry spaghetti noodles for this when I didn't have toothpicks). Immediately spread with glaze made of 2 cups lightly packed powdered sugar and the juice of 2 lemons. Cool.

I copied yours, and thought maybe you'd like another one too!

Double Lemon Pudding Cake

1 lb. 3 oz. lemon cake mix
4-1/2 oz. package instant lemon pudding mix
3/4 cup water
3/4 cup salad oil
4 eggs well beaten

Combine and mix the cake mix and instant pudding mix, add water, oil and eggs.
Beat 3 to 4 minutes at high speed. Pour into a well greased 10 inch bundt pan or tube pan.
Bake in pre-heated 350 degree oven about 50 minutes.
Cool 10 minutes. Served frosted or topped with whipped cream.

Thanks for the recipes. We all like lemon around here. Will try them both but won't be same day. The fact that it doesn't require icing is a plus. Have to try to minimize the amount of calories and I don't think these cakes will have many. At least, I hope not.
