Ah, didn't recognize it as such because our local butcher Stearns Meats doesn't have a meat case. They do have a small case with cryovac items such as marinated raw meats or prepared meats, but if you want fresh meat they cut it right in front of you on the steel tables. Want steak? They go into the cooler (since the "store" itself is about 50 degrees I certainly feel cool enough) to grab the hanging piece, then cut it right there to size.
