These are a favorite and easy to do. Those eating them will swear you worked all day on them.
Cream 1 cup of butter and 1 cup of light brown sugar. packed. Add 1 egg, if you do not want to use raw egg use some egg beater instead. Sorry I forgot to note this earlier. 4 tab. of flour, 1 tea. vanilla and 1 tea.almond extract, a few grains of salt 1-1/2 cups toasted and chopped pecans cooled. Put mixture in paper lined cupcake tins.Freeze.when ready to serve top with whipped cream after removing from freezer about a half hour before ready to eat.
